ONE DAY SPECIALITY COURSES 9.30am - 2.00pm  (all courses are for six students unless otherwise stated and the price listed is per person)


Italian Style Summer Entertaining £110, 18 May

Everything you will need for relaxed 'al fresco' dining this summer. Students will prepare a menu perfect for that long lazy lunch in the sun, or a candlelit supper party on the lawn.

Sample menu: Capesante Gratinate • Chicken Parcels with Spinach & Mascarpone wrapped in Pancetta • Fresh Lemon Curd Profiteroles 


Seafood £120, 6 July 9.30am to 3.00pm

A day spent preparing, filleting and cooking fresh fish; shellfish and crustaceans; preparation and recipes for local crab and lobster, scallops, sea bass, clams and mussels.

Sample menu: Crab Crostini with Cherry Tomato and Avocado • Lobster & Asparagus Risotto • Sea Bass in a Salt Crust


Indian Cooking £110, 29 June

Pestle and mortar at the ready, spend a day in the kitchen roasting and blending your own spices to create Indian dishes with a wonderful depth of flavour.

Sample menu: Garam Masala • Lamb Curry • Spiced Chick Peas • Spinach & Potato Saag Aloo • Naan Bread • Prawn Curry • Aubergine Bartha


Pasta, Pizza & Italian Breads £110, 3 August

This course will need some serious muscle with plenty of pasta,  pizza and bread dough to be kneaded!

Sample menu: Pizza with Buffalo Mozzarella, Parma Ham & Rocket • Foccacia with Rosemary & Sea Salt  • Black Olive Grissini • Wild Garlic Parpadelle with Aubergine, Tomato & Burrata Sauce • 


Coastal Foraging and Cookery £120, 22 June 9.30am to 3.00pm

Spend the morning foraging the local coastline for sea vegetables and edible flowers before returning to the cookery school to create a fresh, seasonal, flavour packed lunch with your foraged treasure and other local produce.

Maximum 4 people

Sample menu: Grilled Sea Bass with Sea Beet, Samphire and Black Mustard Butter  •  Meadow Sweet Infused Panna Cotta


Sicilian Cooking £110, 14 September

Learn to cook (and eat) like Montalbano! Join Giuseppe in creating dishes taught to him by his mother and grandmother, exploring the delicate flavours and delicious ingredients of this beautiful mediterranean island.

Sample menu: Arancini (Sicilian rice balls) • Spaghetti Con Le Sarde • Granita al Limone • Cannoli Siciliani (pastries filled with sweet ricotta)

Moroccan Cookery £110, 21 July

Enjoy the intense, fresh flavours of the Middle-East and learn about slow-cooking with a tagine.

Sample menu: Preserved Lemon • Sardines stuffed with Sultanas & Pinenuts • Lamb, Almond and Olives Tagine • Spiced Cous Cous with Peppers & Aubergines and Flat Bread  

Mad About Mushrooms £110, 20 September, 9.30am to 3.00pm

If, like Giuseppe, you are passionate about fungi, this is the course for you. Weather and seasonal conditions permitting, students will spend the morning on a mushroom foray led by resident expert Giuseppe. They will assist students with identification and techniques for collecting mushrooms. Back in the kitchen, Giuseppe will demonstrate how to clean, prepare and conserve various mushrooms.

Sample menu: Crostini of Sautéed Wild Mushrooms • Wild Mushroom Risotto • Fresh Egg Pappardelle with a Wild Mushroom Sauce • Loin of Purbeck Venison with Polenta and Wild Mushrooms 

La Cucina Toscana £110, 13 July

Having spent my first years as commis chef in Florence, I fell in love with this region's food.

Sample menu: Panzanella Salad • Fiori di Zucca in Pastella • Roasted Leg of Lamb with Rosemary Potatoes and Piselli alla Fiorentina • Almond Cantucci • Poached Peaches in Vin Santo with Vanilla Mascarpone and Pistacchio.  


Big Chef Little Chef  £175, 10 April ( price based of one adult and one child with a minimum age of 10 years old )
This class is based on easy and quick dishes to prepare and it does't matter the age.

Sample menu: Baked Salmon Supreme with sauteed New Potatoes and Asparagus  • Thai Chicken and Vegetables Broth  • Fresh Pasta with Ricotta and  Basil and Toasted Pine Nut Pesto  • Baked Beef Meatball served with Soda Bread

Risotto, Bruschetta and Prosecco £50, 10 May

Whether it’s a light lunch or relaxing supper you’re after, learn how to make fresh and interesting new recipes.
Sample menu: Prawn, Sea Purslane, Samphire and Lemon Zest Risotto •Grilled Chicory, Fig & Dolcelatte Bruschetta • Courgette, Broad Beans and Pecorino bruschetta


Baking Course £50,  4 July
An introduction to some principles of baking (includes sweet & savoury baking techniques).

Sample menu: Lemon Tart - sweet pastry • Chocolate Pudding  • Focaccia • Olive & Rosemary Rolls


Moroccan Cookery £50,  19 April

Fish Cookery £60, 24 May

Learn the easy and healthy way how to cook fish.

Sample menu:  Grilled Sea Bass Fillet with Asparagus, Wild Fennel, Roasted Cherry Tomatoes and New Potatoes  • Thai Prawns, Mussels, Pack Choi, Chilli and Ginger Broth • Baked Cod Supreme with Beans Salad and Chorizo.


Demo & Dine Supper Club £45

Foraged of the Day 28 June 7.00pm

Sample menu: Seared Scallops with Wild Sorrel and Sea Purslane Salad • Grilled SeaBass Fillet with Wild Garlic Butter and Samphire  • Meadow Sweet Panna Cotta

Tour of Italy from Country to Coast 26 April 7.00pm
Sample menu: Prawns, Asparagus and Lemon Zest Risotto  • Chicken Parcel filled with Marjoram and Mascarpone • Tiramisu
